I have no idea why I call these "toddler" muffins, because anyone of any age can eat these! They are so yummy and super clean/healthy. I brought them on our trip to Indiana and had at least 4 mini muffins a day!
Sadly, I don't have one picture but I promise they are tasty and you can really add/subtract things you like/don't like. Super simple.
This recipe isn't from anywhere, again I kind of winged it and they tasted good.
What you need:
1 3/4 cup whole wheat flour
1/4 cup brown sugar
1 tsp cinnamon
2 tsp baking powder
bananas, mashed
3/4 cup greek yogurt
1 egg
craisins, raisins, apple, pumpkin, shredded carrots, oats*
*Literally throw in anything you want! I wouldn't take out the banana because it's replacing oil. I used dried cranberries and oats. SO good!
Preheat oven to 375 degrees.
In a medium bowl, mix together dry ingredients. Add greek yogurt, banana, and egg and mix thoroughly.
Lastly, add your "mix ins". Spoon into greased muffin tins or muffin liners and bake for 12-15 minutes.
Enjoy!
Makeup
Over Thanksgiving, my SIL did my makeup a few times and recommended some new goodies.
I rarely wear makeup (once a month?). I just don't have the time to put it on every day. Plus, I really don't think Emma notices.
Anyway, I sent my husband this selfie and said "I feel like a street walker." because when you don't wear makeup, even the littlest bit feels like a lot.

Before she even started, Caralyn put a coat of some foundation primer on my face. Usually I just have moisturizer on and then start with my makeup, but she put this Laura Mercier Foundation Primer on to ensure an even application of my foundation.
So the biggest difference between what my SIL did and what I do, is the beauty blender. It's apparently pretty popular and I had no idea it even existed.
It's basically another type of sponge, but it spreads your foundation super evenly. I don't know, that's what Caralyn said. You can read more about it here.
And lastly, she used the Urban Decay Naked 3 palate for my eyes. This is something I would probably never use (mostly because who has time to put 3 different colors on their eyes?), but I snagged it anyway. I love it! I'm so glad I splurged on it.
And because I knew I was making a pretty hefty purchase at Sephora (I think it was almost $100), I shopped through Ebates and earned cash back! I definitely encourage you to use Ebates whenever shopping online. I can do a post about it but basically you find your store by typing the name in the search window, and shop through their link.
Just from my Sephora purchased I earned $8.56.
Seriously-- for doing nothing, Ebates is an easy way to earn a few dollars. Especially during the holidays!

Healthy Squash Burritos
I know, I know. They sound a bit too healthy, but I promise they are good! With the holidays approaching, it's important to get at least one healthy and veggie-filled meal in a day, am I right?
Enter this recipe! Sadly I did not take one lousy photo, but we'll be having it again and I'll update this post.
It's based very similarly off this recipe, check it out.
See? Not so bad. The pictures look yummy. My husband won't touch veggies with a 39.5 foot pole, and he ate one of these to appease me.
I don't really follow recipes, so I'm trying to wing this.
What you need:
4 tortillas
can/black beans, drained and rinsed
1 spaghetti squash, cooked and shredded up in a bowl.
1/2 cup (or more, I used more because again my husband isn't into veggies) brown rice
small onion, chopped
some garlic
1/2 cup shredded cheddar cheese
1 red/yellow/green pepper (I did one of each), chopped
spices-- cumin, salt/pepper, red pepper flakes
Any toppings you like (we used greek yogurt, lettuce, and salsa)
Cook brown rice. In a medium skillet, sauté onion and garlic. Add in seasonings. (Again, sorry, just wing it!).
Add peppers, rice, and black beans. Let it all hang out for a bit.
Add spaghetti squash and cheese and stir until melted.
Microwave tortillas for 20 seconds, and spread squash mixture on. Top and enjoy!

A Peek Into Our Week
Ahhh it's technically our "Monday" because my husband has different days off than the rest of the world, so we are dragging today.
I grabbed some good deals on Cyber Monday. My SIL has me into makeup so I ordered stuff on Sephora-- I will have to share what I got later.
We had a great week! Wednesday morning I snuck out to get a few Christmas goodies. I met a lady who had 9 kids. She adopted a boatload of kids and gave birth to the rest. Her cart was full of Frozen themed stuff. :)
That afternoon we did some Christmas shopping at the mall, so I feel like we are sitting pretty in the gift department. That doesn't mean we won't be shopping on Christmas Eve at the mall or something..that kind of adds to the fun, though, right?
Ems had to have her flu shot yesterday so we waited 20 minutes for a 30 second shot. I let her wander around the waiting room and touch every toy, so I'm sure we'll be back. Ayy yi yi. We met a ba
Speaking of Ems, we are in full blown tantrum mode. Tantrums because I won't let her play in the toilet, and because we can't go outside with the dogs. I'm sure there's more but my mind is blank.
Tonight we are having this pasta bake which looked yummy and slightly healthy. I don't have 1/2 and 1/2 or cream cheese, but I do have greek yogurt. We'll see how it turns out!
Okay, I can't think of anything else. My grandparents are coming next week so we are just getting ready for them!
Thanksgiving 2014 Recap
Wow, I can't believe Thanksgiving is already over! We had the best Thanksgiving yet. That is saying a lot when I've spent a Thanksgiving in NYC watching the parade!
Several months ago (August?) my MIL mentioned they would be going to her brother's house for Thanksgiving, and they wanted us to come.
Okay I've wanted to write this blog post for a week so I'm just going to cut to the chase. We drove to Indiana and surprised Nathan's parents! Nathan's family knew, just not his parents, so it's not like we went all Eddie on them. (Ahem, Christmas Vacation reference).
It was totally worth the screaming in the car (by my husband and child), the 8 solid hours of Sophia the First, and all of us ending up with colds at the end.
We hung out around Nathan's aunt & uncle's house, my SIL & I did some shopping, and we did lots of eating. Lots.
Wednesday night we attempted some photos. I'll spare you the outtakes but this is kind of hilarious:

The food was wonderful. If I didn't convince you that it was good, how about the guy literally shoveling the food into his mouth? LOL.
Ems was thrilled to have lots of people to watch. She did so well; I am still quite shocked!
Oh and this is the scarf my SIL convinced me to buy on Black Friday. Emma loves it! Also note: my hair is still growing back. OMG.
I walked downstairs wearing it and Nathan said "Really?".
Bark "Recipe"
Over Halloween I got this idea to make bark. I love white "chocolate" and candy corn, so I figured why not throw them together?
It was amazing.

Before I was pregnant I never ate chocolate..then I got pregnant and could tolerate it. Now it kind of grosses me out, but I eat it in small amounts.
Anyway, it's very simple and a recipe is not even necessary.
Just melt your chocolate (baking chocolate works best)-- white, milk, whatever. Put 3/4 of it on a jelly roll pan with some wax/parchment paper, and smooth it off. Throw your toppings on (I used candy corn M&Ms, candy corn, Oreos, pretzels that I chopped up, and Halloween sprinkles) and drizzle the remaining chocolate on.
I threw mine in the freezer for 15 minutes or so, broke it up, and it was good to go!
This morning, me and my girl made it with a Thanksgiving theme. I did 2 batches-- 1 lb of white and 1 lb of milk. I tried to find some darker and fall-ish colors so I got Reese's trees, pretzels, and Reese's pieces. It turned out beautifully! It would also have been nice to find some Thanksgiving sprinkles, but I couldn't justify the $4 container of sprinkles.
I forgot to take a picture and it's all packaged up for our neighbors..whoops.
So easy. Definitely try it!
A peek into our week
**I thought it would be kind of fun to do a weekly "peek into our week". This way, I can look back and see what kinds of things were going on in our life at that specific time**
Emma is napping. I have approximately 12 minutes of free time, so I will try to make this quick.
Nathan came home from work this morning with candy canes, Diet Coke (win!), Reese's Trees, Hershey's miniatures, and Andes mints. He's insane. I put all the candy canes on our tree (yes, it's up and decorated). I wonder if he'll notice they are missing.
There is not much going on here. I think Emma is teething, so she's been a bit of a crab apple, not eating much, and hard to go to sleep. Luckily I am still breastfeeding (yes, still) so she can get some nutrition from that. This too shall pass.
Nathan made pancakes for dinner last night after he got in from mowing (it was 30 degrees!). He wanted to, so I went along with it. I'm not sure why we make pancakes because every time we run into the same predicament-- we don't have nonstick cookware, so we either have to use Pam (which we happened to be out of), pray the pancakes don't stick (yeah right), or use the only non stick pan we have which is a giant wok. He opted for the wok. This is my reminder that we need to get some nonstick cookware for each other for Christmas..how romantic.
All but 2 pancakes were burnt.
I taught Emma how to use chapstick. It is the funniest thing (obviously I don't have a lot going on). I'm trying to teach her where he nose is. She tries to go after the christmas trees, but we keep saying "no no, Mama's pretties". I cannot tell you how many times a day I say that.
That is all that's going on in our casa this week! I can't wait to report how our Thanksgiving goes next week.
